Address book collects contacts despite this being turned off

We minimize personal- and customer data. In the settings, I have turned off that the address book collects random addresses when I open or reply to an email. Those are all the relevant settings that I could find. Still, the address book collects customer information and stores it indefinitely. How can this be turned off?

It is unclear to me whether these addresses are lifted from emails or calendar invites, from sent or received. In case it is relevant: I primarily use Thunderbird for both email and calendar, but occasionally use the webinterface for things like managing calendar permissions.

For us it is a contractual obligation to erase customer data in a limited time frame, as well as a potential GDPR violation to store personal data indefinitely in a place where it serves no purpose (article 5(1)(c)).
